Doesn't the picture above look absolutely delicious? It is my favorite sandwich(from Beet Jar Juice) EVER and it's Vegan.
January 1st I signed up for http://www.veganuary.com. Veganuary is a Pledge to go Vegan for the month of January. Click on there link and check out the information, recipes and answers to all your questions.
To be honest I did this last year and on day 21 I was dreaming about grilled salmon, when I woke up I told my husband, "I have to have salmon for dinner". This year was really different for me. I had been working on a lot of personal goals and I had been reading a ton of books, fiction, non-fiction and some Self Help. We all need a little help, right?
I want to start by saying I haven't eaten red meat or pork in over 25 years and turkey maybe twice a year, Thanksgiving and Christmas. To me, dairy is a food group, I LOVE cheese and during PMS I could eat Ballrich's potato chips and Toft's french onion dip everyday, I'm not kidding I love the stuff and there's nothing better then red wine after working all day or on the weekends. I know red wine had nothing to do with being Vegan so let me back up a bit. One of my personal goals was to be the healthiest version of myself. So I really started to become aware of how I was feeling on the inside, mind, body and spirit. On Oct. 1st I started meditating for 20 minutes first thing every morning and that's where things started shifting for me. I would hear this inner voice tell me to pay attention to what I was putting in my body. I was always feeling tired because I wasn't sleeping or I would wake up at 2:00-3:00 a.m and wouldn't be able to fall back to sleep. So of course I would be irritable, fatigued and not living up to my potential. I was also having constant body aches and my stomach felt bloated and uncomfortable. My inner voice was getting louder and louder, annoying actually then I decided I'm going to make some serious changes.
On December 26th I decided no more wine because really what positive effects does it have on my body, mind and spirit? None! I also decided to commit to the Veganuary with no cheating.
So here it is February 1st and I feel Amazing maybe the best I've ever felt as an adult. My Vegan journey was surprisingly easy. The one thing I found crazy is that I had no cravings, not even during PMS week, that is huge. I sleep eight hours a night, my hair, skin and nails look better then ever and I feel really clear and incredibly focused. I still have a few aches and pains but I am delving a little deeper in meditation and working on them.
Overall it has been a great month and I've decided to keep going because I don't want this amazing feeling to go away. I have only one thing I am adding back in, Seafood, it is my favorite. As for my love affair with cheese, wine and chip dip, I think we are over!
Stay tune! If you have any comments or questions I would love to hear from you.
